Spring Sip n Savor Short Ribs Recipe Now Available!

Chef Corey's yummy short ribs were a hit at the Spring Sip n Savor. To try them yourself follow the recipe below:

2-3# short ribs trimmed of fat
Salt, pepper and veg oil
1 onion rough chop
1 carrot rough chop
2 ribs of celery rough chop
3 garlic cloves rough chop
1 TB whole black peppercorns
1 bay leaf
4 sprigs fresh thyme
½ c port wine
1 c Red House Red wine
2-3 c beef stock
1 anchovy filet minced

Preheat oven to 350. Season ribs with salt and pepper and set aside. In a large pan over medium heat add enough oil to coat bottom. Add the ribs and brown on all sides. Remove from heat and pour off excess oil and fat. Add onion, carrot, celery and garlic to pan. Saute the veg until they begin to brown. Add bay leaf, peppercorns and thyme. Add both wines and reduce by half. Add ribs to pan and enough stock to cover. Bring to a boil and cover.

Place in oven and braise 3-4 hours or until falling off the bone.

Remove ribs from pan and keep warm. Strain the cooking liquid into a sauce pan and reduce by half. Add anchovy simmer a bit longer then puree until smooth. Check seasoning and adjust where needed. Serve and enjoy.

Our Winery and Tasting Room on Old Mission Peninsula has become a member of WOMP - the Wineries of Old Mission Peninsula! This means we'll be part of all their upcoming events. We hope to see you to celebrate Blossom Days on May 17th and 18th from noon-5 p.m. It's one of the most beautiful times of the year to be "up north."

People's Choice

Our wines were the "Peoples Choice" at the 1st Chef's Challenge for Challenge Mountain held at Shanty Creek on Saturday. The Challenge pitted chefs from the north of Michigan against chefs from the south - south of M-10. The north champs came from the Magnum Hospitality (Red Mesa, Pearls, & Fish) and the south from Wyndgate Country Club in Rochester Hills. These two teams went on to compete on Sunday night for the Challenge title. Short's was the "peoples choice" brewery.

March Tack Sale Success

The Tack Sale on March 22nd at the farm was a hit. Lots of vendors, lots of shoppers and, of course, lots of horse people hanging out. The turnout was great, and Kari is planning to do it again next year - same time, same place - so mark March 21st, 2009 it on your calendars. Thanks go out to everyone involved!

Black Star Farms management has successfully created a workplace that does more than just improve productivity; it has also built a strong organizational culture that supports the company itself. The recently awarded Psychologically Healthy Workplace Award is designed to recognize organizations for their efforts to foster employee health and well-being while enhancing organizational performance.

Psychologically Healthy Workplace Awards have been presented to organizations by state, provincial and territorial psychological associations with support from the American Psychological Association. The award program highlights a variety of workplaces, large and small, profit and non-profit, in diverse geographical settings. Applicants are evaluated on their efforts in these five areas: employee involvement work-life balance, employee growth, health and safety, and employee recognition. The state-level award program has been extremely successful, with participation growing to 51 associations across the U.S. and Canada. Collectively, more than more than 350 organizations have been recognized at the state level.

Wine Enthusiast magazine has selected Black Star Farms, Suttons Bay in its May issue as one of America’s Top 25 tasting rooms.

"Everything we do at Black Star Farms is aimed at creating a unique experience for our visitors and customers" says Don Coe, managing partner of Black Star Farms. This no doubt comes across to the thousands of folks visiting the"farm" every year.

The top 25 tasting rooms were evaluated by wine quality (the top criteria considered), followed by decor, staff savvy, amenities and overall uniqueness.
