In this style we halt the fermentation to leave an appropriate amount of balancing residual sugar, which also makes the wine that much more intense and flavorful.
Flavor and Aroma: Ripe peach and honeysuckle are complemented by subtle hints of nutmeg, citrus and cool slate. The concentrated fruit flavors of peach, apricot, and citrus are balanced by refreshing acidity. Aging Potential: Proper cellaring will reward the patient in five plus years. Thoughts for Food: The rich stone fruit and citrus flavors of this Riesling make it perfect to serve with spicy cuisine such as Thai or Indian. It is also a versatile aperitif and/or dessert wine. Wine Makers Comments: This fruit is harvested very late in the season and often has a little botrytis in its makeup.
